Preparación
- Season the salmon with 2 teaspoons Old Bay, 2 teaspoons smoked paprika, 1 teaspoon garlic powder, the salt and 2 tablespoons of the olive oil. Rub it on all sides and set aside.
- Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat until it shimmers. Add the salmon skin side down and cook 4 to 5 minutes to crisp the skin. Flip and cook 4 to 5 minutes on the other side. If it is not cooked to your liking, finish it in an oven preheated to 350°F (180°C).
- Cook the pasta in a pot of boiling salted water until al dente, following the package directions.
- In a large skillet, melt the butter over medium heat. Add the shallot and garlic and cook for 2 minutes. Add the tomato paste, heavy cream, 2 teaspoons Old Bay, 2 teaspoons smoked paprika and 1 teaspoon garlic powder, and stir to combine.
- Stir in the Parmesan, cherry tomatoes, spinach and sun-dried tomatoes. Lower the heat and stir until the cheese has melted and the spinach has wilted.
- Add the cooked pasta and toss lightly.
- Plate the pasta, top with the salmon and spoon over extra sauce.
