- Parsley · chopped3 tbsp
- Salt½ tsp
- Egg2
- Chicken breast · boneless skinless thinly sliced3 lb
- Olive oil¾ cups
- Spaghetti1 lb
- Garlic4
- Chili flake · dried flakes½ tbsp
Instructions
- In a bowl, mix the breadcrumbs, Parmesan, garlic powder, parsley and salt. Put the eggs in a second bowl.
- Dip each chicken slice in the egg, let the excess drip off, then coat it in the breadcrumb mix.
- Heat 1/4 cup olive oil in a large heavy skillet over medium heat.
- Fry the cutlets in about 4 batches without overcrowding, for about 3 minutes per side, until golden brown and the internal temperature reaches at least 165°F. Add more oil as needed. Move the cooked cutlets to a wire rack.
- Bring a large pot of water to a boil over high heat and salt it. Cook the spaghetti until al dente, following the package directions.
- While the pasta cooks, heat 1/4 cup olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook, stirring often, for 1-2 minutes, until fragrant.
- Add 1 cup of the pasta cooking water to the skillet and keep warm over low heat until the pasta is ready.
- Lift the spaghetti from the pot with tongs and add it to the garlic-oil mixture. Stir well.
- Bring to a low simmer over medium heat and cook, stirring constantly, for 2-3 minutes, until the sauce thickens and becomes silkier.
- Stir in the Parmesan and parsley, then remove from the heat.
