Ultimate Muffins Any Flavor
Ingredients
- Brown sugar0.58 cups
- Sugar · for sprinkling9 tbsp
- Cinnamon · ground1 tsp
- Butter · melted, softened¾ cups
- Flour⅔ cups + 1
- Baking powder1 tsp
- Baking soda1 tsp
- Salt½ tsp
- Sour cream½ cups
- Egg2
- Vanilla1
- Milk¼ cups
Instructions
- Preheat the oven to 425°F (218°C). Grease a 12-cup muffin pan with nonstick spray or line it with cupcake liners.
- Make the streusel: in a medium bowl, mix the brown sugar, granulated sugar and cinnamon. Stir in the melted butter, then work in the flour with a fork just until combined, leaving large crumbles. Set aside or refrigerate.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt and cinnamon (if using).
- Using a mixer with a paddle, beat the butter, granulated sugar and brown sugar on high for about 3 minutes until smooth and creamy, scraping down the bowl as needed. Add the sour cream, eggs and vanilla; beat on medium for 1 minute, then on high until combined, scraping the bowl again.
- On low speed, add the dry ingredients to the wet and mix until almost combined. Add the milk and mix on low until combined. Fold in your add-ins; the batter should be thick.
- Spoon the batter into the muffin cups, filling them right to the top. Sprinkle with coarse sugar or add the crumb topping, pressing the crumbles lightly so they stick.
- Bake 5 minutes at 425°F (218°C), then, without removing the muffins, lower the oven to 350°F (177°C) and bake another 15–18 minutes, until a toothpick inserted in the center comes out clean (about 22–23 minutes total).
- Cool the muffins in the pan on a rack for 10 minutes, then move them to the rack to cool completely.
