Ultra-Smashed Burgers

Ingredients

Instructions

  1. Prepare the bun: layer the toppings on the bottom half and set it aside.
  2. Preheat a large stainless steel pan over high heat for 2 minutes. Put the beef balls in the pan and press them down firmly with a stiff spatula or trowel to make thin patties wider than the bun.
  3. Season generously with salt and pepper and cook until well browned and the tops start to turn pale pink-grey in spots, about 45 seconds. Scrape the patties off the pan with a bench scraper or razor scraper, getting all the browned bits.
  4. Flip the patties, put a slice of cheese on one and stack the second on top. Immediately move the stack from the pan to the bun and serve.
