Uni Pasta Recipe - Japanese Style Pasta

Uni Pasta Recipe - Japanese Style Pasta

Ingredients

Instructions

  1. Set aside a quarter of the 150 grams uni for garnish. Mash the rest in a bowl with a whisk, leaving it slightly chunky, then gently whisk in the light cream.
  2. Bring 10 cups of water to a boil and add 1 teaspoon of salt.
  3. Add the 200 grams spaghetti and cook for 2 minutes less than the package time.
  4. About 3 minutes before the pasta is done, heat the olive oil in a skillet over medium-high heat. Add the garlic and anchovy and sauté until the garlic is fragrant but not browned.
  5. Lower the heat and add the soy sauce, which will spatter. When most of the liquid has cooked off, add the sake, turn the heat back up and boil to cook off the alcohol.
  6. When the timer goes off, move the drained pasta straight into the skillet and add a ladle of pasta water. Cook like risotto, adding more pasta water as needed and stirring for another 2 to 3 minutes until the pasta reaches your desired doneness.
  7. Stir in the uni cream and toss the spaghetti until it becomes a creamy sauce.
  8. Serve topped with the reserved uni and garnish with the 5 shiso leaves, cut into thin ribbons.
