Upside-Down Banana Bread Cinnamon Rolls Recipe
Ingredients
- Flour4 cups
- Sugar⅔ cups
- Yeast2 ¼ tsp
- Salt1 ¾ tsp
- Banana · mashed1 cup + 2
- Butter · softened, melted1 ¼ cups
- Milk4–6 tbsp
- Cream cheese · softened½ cups
- Brown sugar1 ½ cups
- Cinnamon · ground1 tbsp
- Honey¼ cups
- Vanilla1 tsp
- Walnut · toasted chopped1 cup
Instructions
- In a stand mixer with a dough hook, mix the flour, sugar, yeast and salt on low until well combined.
- Add the mashed bananas, butter and 4 tablespoons of milk. Mix on low for about 6-8 minutes, until the dough just starts to pull away from the bowl. It should stay very soft and a little sticky; if it seems dry or firm, add the remaining milk.
- Place the dough in a greased bowl, cover well and let it rise in a warm place for 1 ½ - 2 hours, until it has grown in size. It rises slowly and will not get very high.
- Mix the cream cheese, brown sugar, butter, cinnamon and salt in a medium bowl until creamy. Set aside.
- Butter a 9x13-inch (23x33 cm) baking dish.
- Over medium-low heat, warm the brown sugar, butter and honey in a medium saucepan until the sugar dissolves. Remove from heat and stir in the vanilla and salt, then pour into the prepared dish. Scatter the walnuts over the caramel.
- Roll the risen dough on a floured surface into a rectangle about 12x18 inches (30x46 cm), with a long side facing you.
- Spread the filling and diced bananas evenly over the dough. Starting from a long edge, roll it into a tight log.
- Using a serrated knife and a sawing motion, cut the log in half, then cut each half into 2 equal pieces to make 4 small logs. Cut each small log into 3 equal pieces.
- Place the rolls cut side up in the baking dish. Cover and let rise until doubled, about 45 minutes.
- Toward the end of the rise, preheat the oven to 350°F (180°C).
- Uncover and bake for 30-35 minutes, until deep golden brown.
- Immediately turn the hot rolls out onto a serving dish and serve warm.
