Vanilla Pound Cake
Ingredients
- Butter1 cup
- Sugar1 cup
- Vanilla2 ½ tsp
- Milk½ cups
- Egg4
- Flour1 ½ cups
- Baking powder½ tsp
- Salt¼ tsp
- Oil for greasing pan
Instructions
- Preheat the oven to 350°F (180°C).
- Grease a 9 x 5 inch loaf pan with about half a tablespoon of oil, brushing it to coat completely. Add a tablespoon of flour, tap to coat, and discard the excess.
- Beat the butter and sugar with an electric mixer for about 3 minutes until light and fluffy.
- Beat in the vanilla and milk, then add the eggs one at a time, beating lightly after each.
- Sift the flour, baking powder, and salt into the mixture.
- Mix just until combined without overmixing. Pour into the pan, level the top with a spatula, and tap the pan gently to even the batter.
- Bake until golden brown and a wooden skewer inserted into the centre comes out clean, checking from about 40 minutes. If it browns too quickly, loosely cover with foil.
- Cool on a wire rack, then remove from the pan, slice and serve.
