Veg club sandwich | simple vegetarian club sandwich
Ingredients
- Bread6 slices
- Mayonnaise2
- Garlic1
- Cabbage1 cup
- Bell pepper½–¾ cups
- Onion1
- Carrot1
- Oil1 tbsp
- Black pepper½ tsp
- Salt
- Tomato1
- Lettuce4–8
- Potato1
Instructions
- Slice the potato into pieces about 1/4 inch thick and boil until fork-tender but not mushy. Drain and set aside.
- Butter the bread slices and toast them until crisp, in a pan, toaster or air fryer.
- Heat 1 teaspoon oil in a pan and fry the boiled potato slices until crisp on both sides. Move them to a plate.
- Add the garlic and saute for a minute until aromatic.
- Add all the vegetables for the filling except the tomato. Saute on high heat for 3 to 4 minutes, until slightly tender yet crunchy. Season with pepper and a little salt, going light on salt since the mayo or cream cheese is already salted.
- Spread mayo on one inside face of each bread slice to hold the filling in place.
- Place lettuce on one slice, then the fried potatoes, black pepper and a pinch of salt (or other seasoning), then the tomato slices.
- On a second slice, place lettuce and the stir-fried vegetables. Cover with another slice, mayo side down.
- Secure with sandwich picks and slice before serving.
