Ingredients

Instructions

  1. Skip the first part if using precooked rice. Otherwise, wash the rice several times until the water runs clear, then soak it for at least 10 minutes.
  2. Meanwhile, bring 4 to 5 cups of water to a boil in a large pot.
  3. When the water is boiling rapidly, drain the rice, add it to the pot, and pour in 1 teaspoon of oil to keep the rice from getting sticky.
  4. Cook the rice until al dente: it should be grainy, not mushy.
  5. Drain the rice in a colander, let it cool completely, and fluff it up with a fork.
  6. While the rice cools, chop the vegetables and garlic. Set aside 2 tablespoons of the green onions for garnish.
  7. Heat oil in a wok on the highest heat and fry the chopped garlic for 30 to 40 seconds.
  8. Add all the chopped vegetables and fry for 2 to 3 minutes, until half cooked; they should stay crunchy.
  9. Add the soy sauce, then the vinegar and half a teaspoon of sugar, if using.
  10. Immediately add the cooled rice, 1/4 teaspoon of salt and the black pepper, and fry for 2 minutes.
  11. Garnish with the reserved fresh green onions.
