- Oil2 cdas.
- Tamari1 cda.
- Vinegar1 cdta.
- Salt
- Black pepper½ cdtas.
- Carrot¼–½ tazas
- Bell pepper¼ tazas
- Green bean¼ tazas
- Scallion¼ tazas
- Cabbage¼ tazas
- Chili pepper1
Preparación
- Skip the first part if using precooked rice. Otherwise, wash the rice several times until the water runs clear, then soak it for at least 10 minutes.
- Meanwhile, bring 4 to 5 cups of water to a boil in a large pot.
- When the water is boiling rapidly, drain the rice, add it to the pot, and pour in 1 teaspoon of oil to keep the rice from getting sticky.
- Cook the rice until al dente: it should be grainy, not mushy.
- Drain the rice in a colander, let it cool completely, and fluff it up with a fork.
- While the rice cools, chop the vegetables and garlic. Set aside 2 tablespoons of the green onions for garnish.
- Heat oil in a wok on the highest heat and fry the chopped garlic for 30 to 40 seconds.
- Add all the chopped vegetables and fry for 2 to 3 minutes, until half cooked; they should stay crunchy.
- Add the soy sauce, then the vinegar and half a teaspoon of sugar, if using.
- Immediately add the cooled rice, 1/4 teaspoon of salt and the black pepper, and fry for 2 minutes.
- Garnish with the reserved fresh green onions.
