- In a large bowl, mix the flour with a pinch of salt and 1 teaspoon oil. Gradually add water and knead into a soft dough. Cover with plastic wrap and rest for about 30 minutes.
- In a large plate, combine the crumbled paneer, red bell pepper, green bell pepper, coriander and red onion. Add 1 tablespoon each of garlic paste and ginger paste, the soy sauce, chili sauce and salt to taste, and mix well. Add the refried beans, if using, and combine.
- Fill a steamer with a couple of cups of water and bring it to a boil over high heat.
- After the dough has rested, rub the surface with 1 teaspoon oil to smooth it. Keep it covered at all times.
- Pinch off small balls of dough and roll each into a 5-inch round, thicker in the middle and thinner at the edge.
- Place about 1½ tablespoons of filling in the centre, gather the edges on top and pinch off any excess dough.
- Cover the shaped momos with a kitchen cloth.
- Arrange the momos in a single layer in the greased steamer and steam for about 10 minutes.
- Heat a little olive oil in a skillet, add a few momos and flip them until both sides are golden brown.
- Add 2 to 3 tablespoons Schezwan sauce and stir the momos to coat them.
- Serve warm, garnished with chopped coriander and green onions.
