Instructions
- Mix the flour, salt and oil in a bowl, add the water gradually and combine into a dough. Cover with clingwrap and rest for 15 minutes.
- Knead the dough until smooth, cover with a damp cloth and rest it for another hour.
- Chop the garlic, ginger, green chilli and all the vegetables finely in a chopper.
- Put the chopped vegetables in a muslin cloth over a sieve, add a large pinch of salt, rest 2-3 minutes, then squeeze out all the excess moisture and transfer to a bowl.
- Heat the oil in a pan over high heat. Add the vegetables with the white and black pepper powders, vinegar and sugar, and cook over high flame for 1-2 minutes. Add the light soy sauce and red chilli sauce and stir well.
- Taste and adjust the seasoning if needed. Transfer to a large bowl, let it cool slightly, then mix in the coriander and spring onion greens.
- For the chilli oil, put the chilli flakes, soy sauce and powdered sugar in a heatproof bowl, mix and set aside.
- Heat the oil in a pan to 120°C, add the star anise, cinnamon and garlic, and fry over medium flame until the garlic is light golden brown and crisp.
- Remove the pan from the heat and carefully pour the hot oil over the chilli flakes mixture. Stir well and let it cool to room temperature.
- Divide the dough into four equal parts, coat each ball with corn flour, flatten and roll very thin, dusting with corn flour each time. The sheet is thin enough when your hand is visible beneath it.
- Cut the sheets into 5x5 inch squares, place them on a plate and cover with a cloth, dusting with enough corn flour so they do not stick.
- Place a small spoonful of filling in the centre of a wrapper, brush the edges with water, fold diagonally into a triangle and press to seal. Dampen the two corners, bring them together and pinch to seal.
- For fried wontons, fry them in oil at 160-165°C over medium flame until crisp and golden brown. Serve with sweet chilli sauce.
- For boiled wontons, boil the shaped wontons in boiling water for 5-6 minutes, then drain. Serve in a bowl with chilli oil to taste, a dash of light soy sauce and vinegar, a teaspoon of sesame oil, sesame seeds and hot water.
