Vegan Apple Cinnamon Scones (No Oil, Low Fat)
Ingredients
- Almond milk½ cups
- Lime1 tsp
- Apple sauce¼ cups
- Flour1 ¾ cups
- Almond flour¼ cups
- Baking powder2 tsp
- Baking soda¼ tsp
- Brown sugar3 tbsp
- Apple · thinly sliced1 ½ tsp + 1 ¼ cups
- Salt½ tsp
- Maple syrup1 ½ tbsp
- Vanilla½ tsp
- Pecan · chopped
- Coconut sugar2 tbsp
- Cinnamon · ground¾ tsp
Instructions
- Mix the apple sauce, lime juice and non-dairy milk in a bowl and freeze for 20 to 25 minutes. Meanwhile, prepare the ingredients and slice the apple.
- Toss the sliced apple with the maple syrup in a bowl and set aside. In a large bowl, mix the dry ingredients very well.
- Take the milk and apple sauce mixture out of the freezer and break any frozen pieces into small bits. Reserve 2 tablespoons and add the rest to the flour, pressing and mixing until no large frozen pieces remain. Add the apples and the vanilla extract, if using, and mix.
- Add the reserved mixture 1 tablespoon at a time as needed, to make a slightly stiff dough that just comes together.
- Shape the dough on a parchment-lined baking sheet or stoneware dish into a rough circle about 3/4 inch (2 cm) high.
- Brush with non-dairy milk or any leftover apple sauce mixture. Mix the cinnamon and sugar in a small bowl and sprinkle over the dough. Cut into wedges with a pizza cutter and separate them slightly. Freeze for 15 minutes.
- Preheat the oven to 435°F (225°C). Take the tray out of the freezer and bake for 17 to 19 minutes. Tap the scones: if they sound hollow they are done; if not, bake 3 to 5 minutes more.
- Remove from the oven and cover with a clean towel to cool for 10 minutes. Ice with a simple sugar icing if you like, and serve. Keep covered on the counter for up to 1 day, or refrigerate for up to 5 days.
