Vegan Carnitas with Mushrooms
Ingredients
- Onion1
- Garlic4 cloves
- Jalapeño chili1
- Mushroom12 oz
- Orange juice¼ cups
- Lime2 tsp
- Soy sauce1 tbsp
- Salt¼–½ tsp
- Cumin · ground1 tsp
- Coriander seed · ground2 tsp
- Smoked paprika1 ½ tsp
- Oregano1 ½ tsp
- Black pepper¼ tsp
- Chipotle pepper½ tsp
- Chili powder1–2 tsp
- Poultry seasoning
Instructions
- Preheat the oven to 400°F (205°C) and line a baking dish with parchment.
- In a large bowl, combine the sliced onion, garlic, jalapeño and mushrooms. Add the orange juice or cider, lime juice and soy sauce, toss well, and let marinate for at least 10 minutes (or chill for an hour).
- Mix the ground spices in a small bowl, sprinkle them over the mushrooms, add salt if using, and toss to coat.
- Spread the mushroom mixture onto the parchment-lined dish in a mostly single layer. Spray with oil if desired.
- Bake for 30 minutes, then move the mushrooms around so the edge pieces don't burn. If the edges or marinade are already burning, lower the oven to 350°F (175°C).
- Bake a further 5 to 15 minutes, depending on how brown you like them and on the mushroom type and slice thickness.
