Instructions
- Oven method: preheat the oven to 400°F (205°C). Oil a 9x9-inch or 10x7-inch baking dish (or similar). Add the cumin and garlic, then the cauliflower, and sprinkle with 1/4 teaspoon salt. Bake for 12 minutes.
- Meanwhile, blend the sauce ingredients with 1/4 cup water. Pour over the baked cauliflower. Rinse the blender with the other 1/4 cup water and add that to the dish.
- Add the peas (or 1 cup cooked chickpeas instead). Add a small chopped tomato if you like, and bake for 25 more minutes. Check that the cauliflower is tender to your liking.
- If needed, bake another 5 to 10 minutes at 350°F (180°C). Garnish with cilantro, pepper flakes and lemon juice.
- Stovetop method: heat a skillet over medium heat. Add the oil and cumin seeds and cook until fragrant. Add the garlic and cook for 1 minute.
- Add the cauliflower and a pinch of salt, toss and cook for 3 minutes, stirring once.
- Add the blended sauce, partially cover and cook for 13 to 14 minutes, until the cauliflower is tender.
- Add the peas, then taste and adjust salt and flavor. Remove from heat, cover and rest for 2 minutes before serving.
