Vegan Chickpea Brownies Grainfree
Ingredients
- Milk⅓ cups
- Maple syrup3 tbsp
- Chocolate chip¾ cups
- Chickpea15 oz
- Butter¾ cups
- Coconut sugar5 tbsp
- Cocoa powder3 tbsp
- Almond flour¼ cups
- Vanilla2 tsp
- Salt0.13–¼ tsp
- Baking powder¾ tsp
Instructions
- Heat the non-dairy milk and maple syrup in a skillet or microwave until just about boiling, then take off the heat.
- Add the chocolate chips to the hot liquid, stir until melted and smooth, and set aside.
- Line a brownie pan with parchment and preheat the oven to 350°F (180°C).
- In a food processor, combine the chickpeas, nut butter, coconut sugar, cocoa powder, vanilla, salt and baking powder. Process for half a minute; the nut butter may not fully blend in, which is fine.
- Add the warm chocolate mixture and the almond flour to the processor and process again until smooth and even. If too thick, add 1 more tablespoon of milk.
- Fold 2 tablespoons of chocolate chips into the batter, then quickly spread it into the lined pan, smoothing the top as much as possible.
- Sprinkle the remaining chocolate chips over the top.
- Bake at 350°F for 35 to 40 minutes. Cool for 10 minutes before slicing.
