Instructions

  1. Preheat the oven to 350°F (180°C). Line an 8 by 8 inch brownie pan or a 9 inch pie pan with parchment.
  2. Mix the warm-hot water, aquafaba, sugar, maple syrup and yeast, and let it sit for a minute until the yeast activates.
  3. Add the oil and nutritional yeast, if using, and mix. Add 2 cups of flour and the 1/3 tsp salt and knead. Add more flour a few tablespoons at a time until the dough is soft and fairly smooth, kneading for 4 to 6 minutes.
  4. Roll the dough on a floured surface into a 10 by 14 inch rectangle.
  5. Brush or spray the dough with oil or melted vegan butter. Sprinkle evenly with the coconut sugar, cinnamon and 1/4 tsp salt. Roll tightly from the long edge into a log.
  6. Slice the log, place the slices in the lined pan, and brush the tops with oil. Cover loosely with a towel and let rise near the warm oven for 15 to 20 minutes, or until nearly doubled. Remove the towel.
  7. Bake for 21 to 23 minutes, until golden at the edges.
  8. Let the rolls cool for a few minutes while you make your icing or frosting, then frost and serve.
