Instructions
- Heat the oil in a skillet over medium heat. Cook the onion and garlic until translucent, then add the red bell pepper and cook for 3 to 4 minutes.
- Add the spinach, basil, thyme, salt and red pepper flakes, and cook until the spinach wilts.
- For the dough, mix the warm water, yeast and sugar and let sit a few minutes. Add 1.5 cups flour, the salt, semolina and oil and mix well with a spoon.
- Add a little more flour if needed, gather the dough and knead for a few seconds until soft. Let it rest in a warm place for 15 minutes.
- Preheat the oven to 435°F (225°C).
- Oil the dough, shape it into a rough ball, then press it with some flour into an 8 to 9 inch pan with tall sides, letting it rise a little above the edge. Keep the base thick enough to hold the heavy toppings.
- Layer vegan mozzarella, pizza sauce, the pepper and spinach mixture, and any other vegetables, then add olives, more sauce, more vegan mozzarella, fresh basil and red pepper flakes.
- Bake at 435°F (225°C) for 25 to 30 minutes. Scatter fresh basil on top and let rest 5 to 10 minutes before slicing.
