Vegan Drumsticks made from tofu skin - YUM!
Ingredients
- Tofu skin · frozen1 lb
- Vegetable oil
- Sugar10 + ½ tbsp + 2 tsp
- Cornstarch3 tbsp
- Mushroom1 tsp
- Salt1 tsp
- Black pepper · ground½ tsp
- 5-spice powder¼ tsp
- Soy sauce1 ½ tbsp
- Caramel sauce1
Instructions
- Mix the tofu skin seasoning in a bowl. In another bowl, whisk the sauce mixture until the sugar dissolves. Set both aside.
- Cut the tofu skin into strips about 1 to 1.5 inches wide. Soak them in 3 cups water and massage until soft, about 2 minutes.
- Squeeze out as much liquid as possible from handfuls of strips, moving them to a clean bowl, keeping them moist but not wet.
- Add the seasoning and massage the strips with your fingers until evenly coated.
- Make a thick cornstarch slurry from 2 tbsp cornstarch and 1 tbsp water. Divide the strips into 10 equal portions of about 80 g each.
- Brush a stick with slurry over about three-quarters of its length, then wrap a tofu strip tightly around it, overlapping each layer, until all strips are used. Crisscross the layers toward the top for a drumstick look.
- Wrap each drumstick tightly in a 6x9 inch sheet of plastic wrap, folding and twisting the ends to secure it, then refrigerate at least 30 minutes until slightly firm.
- Unwrap the drumsticks, brush them with the sauce, and let them rest 1-2 minutes.
- Preheat the air fryer to 325°F for 2 minutes. Grease the rack, arrange the drumsticks slightly apart, working in batches if needed.
- Air fry for 6-8 minutes, flipping once halfway.
