Vegan Lentil Sloppy Joes
Ingredients
- Broth¼ cups
- Onion¾ cups
- Garlic3 cloves
- Bell pepper½
- Celery · chopped½ cups
- Carrot · chopped½ cups
- Smoked paprika½ tsp
- Black pepper¼ tsp
- Chili powder1 tbsp
- Tomato · finely chopped1 ¼ cups
- Tomato paste¼ cups
- Worcestershire sauce1–2 tsp
- Lemon2 tsp
- Green lentil · dried¾ cups
- Water or broth1 ¼ cups
- Salt½ tsp
- Sugar1 tsp
Instructions
- In the Instant Pot on sauté, add 2 tablespoons broth, then the onion, garlic, bell pepper, celery, carrots and a good pinch of salt. Cook for 3 minutes, deglazing with more broth partway through.
- Add the spices, tomatoes, tomato paste, vegan Worcestershire sauce and lemon juice and mix. Then add salt, sugar, lentils and broth, stirring well to lift any stuck bits.
- Close the lid and pressure cook on bean/chili setting for 22 minutes, or on manual/pressure cook for 16 minutes.
- Let the pressure release naturally.
- Taste and adjust salt and flavor. The sauce thickens as it cools; if you used extra broth, let it sit a few minutes and, if still thin, sauté a few minutes to reduce.
