Vegan Luncheon Rice Roll made from OmniPork Luncheon
Ingredients
- Rice · cooked3 cups
- Vegan luncheon meat6 slices
- Vegan cheese3 slices
- Nori seaweed3
- Vegetable oil
- Rice wine vinegar
- Soy sauce1 tbsp
- Mirin1 tbsp
Instructions
- Whisk the soy sauce and mirin together in a bowl until smooth and set aside.
- Heat a large non-stick skillet over medium heat. Pan-fry the luncheon slices until golden brown on both sides.
- Put vegan cheese on 3 of the fried slices, then stack each with another slice to make 3 sets.
- Spread about 1 cup of cooked rice on a lined sushi mat into a 5 by 6 rectangle. Lay a half sheet of nori over two-thirds of the rice.
- Place one stack of luncheon on the part of the nori that has no rice under it.
- Roll up the mat, then compress and shape into a tight, enclosed log, rubbing your palms with sushi vinegar as you go.
- Wipe out the skillet, lightly grease it, and add as many rolls as fit comfortably.
- Grill over medium-low heat until a thin crust forms, about 2 to 3 minutes.
- Flip, brush the crusted side with the sauce, and repeat, brushing each side as it crusts, until golden brown. Adjust the heat if it browns too fast.
- Serve immediately.
