- Flour3 tbsp
- Tapioca starch2 tbsp
- Garlic powder2 tsp
- Onion powder2 tsp
- Mustard · ground1 tsp
- Sugar1 tsp
- Salt1 ½ tsp
- Paprika2–3 tsp
- Black pepper½–1 tsp
- Pasta1 cup
- Milk1 cup
- Cheese · powder⅓–½ cups
Instructions
- Blend all the powder ingredients in a food processor or blender for 2-3 minutes, stopping to scrape the sides, until fine and only slightly gritty.
- Optionally, mix in extra flavourings such as chipotle, cajun or garam masala.
- Cook 1 cup of pasta in salted water according to the package directions. Drain and set aside.
- Combine 1/3 to 1/2 cup of the powder with 1 cup of water or non-dairy milk (not hot) and 2-3 tsp olive oil or vegan butter if using. Pour into a saucepan, or blend first and then pour in.
- Heat over medium until it comes to a boil. Add the cooked pasta and any sautéed vegetables, and cook for 1 minute. Taste and adjust salt and seasoning.
- Cover and rest for 2 minutes. For a thicker sauce, use 1/2 cup of powder; if it is not thick enough, stir in 1 more tablespoon of powder while simmering.
