Vegan Moustokouloura Easy Greek Cookie Recipe!
Ingredients
- Flour4 cups
- Baking soda1
- Baking powder1 tsp
- Salt¼ tsp
- Cinnamon · ground2 tsp
- Clove · ground½ tsp
- Olive oil¾ cups
- Orange juice¼ cups
- Grape1 cup
- Honey½ cups
- Raisin½ cups
Instructions
- Preheat the oven to 350°F (180°C).
- In the bowl of a stand mixer fitted with the paddle, whisk together the oil, grape molasses, honey and orange juice.
- In a large bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon and cloves.
- On low speed, add the flour mixture in a few batches until combined. Do not overmix, or the oil will separate. Mix in the raisins, if using.
- Rest the dough on a clean surface, covered with a towel, for 15 to 20 minutes.
- Divide the dough into 30 pieces and lightly grease the work surface with oil.
- Roll each piece into a 6-inch rope, then join the ends into a ring or coil it into a spiral.
- Place on parchment-lined trays and bake on the center rack for 10 to 15 minutes. Bake longer for crisper cookies; less time keeps them softer and chewier.
- Cool the cookies before serving. Store in an airtight container for up to a month.
