Vegan Naan
Ingredients
- Sugar2 tsp
- Yeast1 tbsp
- Or more4 cups
- Salt1 ½ tsp
- Baking powder1 tsp
- Baking soda¼ tsp
- Coconut oil¼ cups + 1–2 tbsp
- Yoghurt¾ cups
- Onion seed
Instructions
- In a large bowl, stir the sugar into the warm water, sprinkle the yeast on top and let it sit for 10 minutes until frothy.
- In another bowl, mix the flour with the salt, baking powder and baking soda.
- Add 3 cups of the flour mixture, 3 Tbsp oil and 3/4 cup yogurt to the yeast bowl and mix well. Add more flour a few tablespoons at a time until the dough is soft and lightly sticky. Knead for 2 minutes, taking care not to over-knead, as it gets stickier.
- Coat the dough in 1 Tbsp oil, cover and let it rise for 1.5 hours or until doubled.
- Punch the dough down, knead briefly with a little extra flour for half a minute, then divide into 8 pieces. Roll into balls, dust lightly with flour, place on parchment, cover and rest for 20 to 30 minutes.
- Roll or shape each piece gently into an 8 to 9 inch oval, dusting with flour as needed.
- Spritz the tops with water, sprinkle with nigella seeds, then brush or spray with oil.
- Oven: preheat to 450°F with a pizza stone inside for 30 minutes. Bake the naan as many as fit for 2 to 3 minutes until puffed and golden, then broil for 30 seconds to crisp and char.
- Stovetop: heat a cast iron griddle, skillet or grill pan on medium-high until evenly hot. Place the naan bottom-side down, optionally cover, and cook 2 to 3 minutes until it starts to puff. Flip and cook another minute. For charred spots, hold over a gas flame with tongs for a few seconds.
- Garlic naan: after spritzing with water, press 2 tsp finely chopped garlic and 1 Tbsp chopped cilantro onto the dough with the nigella seeds, spray with oil, then cook as above.
