Vegan Pear Upside Down Cake
Ingredients
- Pear · thinly sliced2 + ¼ cups
- Maple syrup3 tbsp
- Milk¾ cups
- Lemon1 tbsp
- Sugar⅓ cups
- Oil¼ cups
- Vanilla1 tsp
- Cinnamon1 tsp
- Flour1 ½ cups
- Baking powder2 tsp
- Baking soda¼ tsp
- Salt½ tsp
Instructions
- Preheat the oven to 350°F (180°C). Line the bottom of an 8- or 9-inch cake pan with parchment.
- Arrange the pear slices in the pan as you like, then pour the maple syrup over them (or sprinkle with the sugar).
- Blend the remaining pear with 1 to 2 teaspoons of water until smooth like applesauce. Measure out 1/4 cup for the cake (or use applesauce instead).
- Whisk all the wet ingredients in a bowl until well combined.
- Mix the baking powder, baking soda and salt into the flour. Add 1 1/4 cups of this flour to the wet ingredients, then add 1 to 2 tablespoons more flour at a time until you have a thick batter that is neither too stiff nor too runny.
- Pour the batter gently over the pears and spread it evenly.
- Bake for 35 to 40 minutes, until a toothpick inserted in the centre comes out clean.
- Cool for 15 minutes, then invert the cake onto a plate. Carefully peel off the parchment.
- Sprinkle the pears with a good pinch of cinnamon, pumpkin pie spice or another spice blend. Cool for another 10 minutes, then slice.
