Vegan Pumpkin Donuts With Cinnamon Sugar
Ingredients
- Milk½ cups
- Pumpkin⅓ cups + 1 tsp
- Sugar8 tbsp
- Yeast1 tsp
- Coconut oil2 tbsp
- Vanilla1 tsp
- Nutmeg1
- Flour¾ cups
- Almond flour2 tbsp
- Baking powder1 tsp
- Salt¼ tsp
- Cinnamon1 tsp
Instructions
- Grease the donut pan.
- Warm the non-dairy milk until hot. Mix it with all the ingredients except the yeast, stirring until the sugar dissolves. Then add the yeast and mix in.
- In a bowl, combine 3/4 cup flour with the remaining dry ingredients. Add this to the wet mixture and mix. If the batter is runny, add about 1 more tbsp flour. Let it rest 10 to 15 minutes.
- Spoon the batter into the greased pan (or pipe it from a bag with one corner snipped). Let it sit 10 more minutes to rise. Preheat the oven to 350°F.
- Bake 11 to 12 minutes. Cool 5 minutes, then remove from the pan.
- Mix cinnamon and sugar in a small bag or bowl. Toss the warm donuts in it to coat. Brushing them with a little oil first gives more topping.
