Ingredients

Instructions

  1. Mix the chickpea flour, salt, pepper flakes and rosemary in a bowl until well combined.
  2. Add the oil and 3/4 cup water and whisk, adding more water to reach a thick, smooth batter (use 1 tablespoon less than a full cup if the flour is packed). Cover and rest at least 30 minutes, or refrigerate overnight.
  3. Stovetop: heat a cast iron skillet over medium heat, add a few drops of oil and spread it. Pour in a ladle of batter and cook 4 to 6 minutes, then loosen with a spatula; if it sticks, cook longer and try again.
  4. Flip and cook for another 2 to 3 minutes.
  5. Oven: preheat the oven to 450°F (230°C) and heat the cast iron skillet in it for 20 minutes.
  6. Carefully remove the hot skillet, drizzle with oil and pour in the batter.
  7. Bake 8 to 12 minutes depending on thickness. Add toppings and bake 3 to 5 more minutes, or flip carefully and bake another 3 to 5 minutes for crispness.
  8. Let cool on the counter, covered loosely with a towel, and serve.
