Instructions

  1. Chop the broccolini into bite-sized pieces and the carrot into matchsticks. Wipe the dirt off the mushrooms with a paper towel and cut them into quarters.
  2. Slice the red bell pepper, quarter the red onion, halve the baby corn and cut the smoked tofu into bite-sized cubes.
  3. Mix the soy sauce, dark soy sauce, hoisin sauce, sriracha, sugar and toasted sesame oil to make the sauce.
  4. Heat a nonstick pan over medium-high heat, add 1 tsp avocado oil and the tofu, and sauté 3-4 minutes. Set aside.
  5. Add another tsp of avocado oil to the pan, then the red onion and broccolini. Sauté a couple of minutes until they start to sear and colour.
  6. Add the mushrooms and carrot and sauté a couple of minutes. Then add the bell pepper and baby corn and sauté another couple of minutes.
  7. Pour in the sauce, return the tofu and sauté for another minute.
  8. Serve the vegetables with freshly steamed rice.
