Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Boil the pastitsio noodles in salted water for 10 minutes, drain, and put them in a 9 by 13-inch baking pan. Add the butter and toss until melted.
  3. Cut off the dark green parts of the leeks and save them for stock or soup. Slice the rest into thin rounds, soak in cold water to let the dirt sink, then lift out and drain well.
  4. Cook the leeks in olive oil over medium heat for 6-7 minutes, until soft and golden.
  5. Add the mozzarella, Parmesan, crushed red pepper flakes and dried oregano to the pasta and toss so the cheese is evenly spread.
  6. Spread the cooked leeks over the pasta. Slice the Roma tomatoes into rounds and arrange them on top of the leeks.
  7. Brush the tomatoes with olive oil and sprinkle with salt. Bake on the center rack for 30 minutes.
  8. Remove from the oven, scatter the olives on top, and bake for another 15 minutes.
  9. Let the pasta cool for 15-20 minutes so it sets before serving.
