Vietnamese egg coffee (Cà phê trứng) 🇻🇳🍳☕️
Ingredients
- Sweetened condensed milk3 tbsp
- Coffee · ground3 tbsp
- Egg2
- Sugar1 tsp
- Cinnamon · ground, for garnish
Instructions
- Put 2 tablespoons of the condensed milk in a medium heatproof glass or mug, and set a phin filter over it.
- Add the ground coffee to the filter chamber and press it down lightly so it is compact but not tightly packed.
- Pour 2 tablespoons of the boiling water over the coffee and let it stand for 30 seconds.
- Fill the filter with the remaining boiling water, cover it with the lid, and let it drip until the dripping stops, 4–5 minutes.
- Meanwhile, put the egg yolks, sugar and remaining 1 tablespoon condensed milk in a small bowl and whisk vigorously for 3–5 minutes, until pale yellow, thick and airy like soft whipped cream.
- Remove the filter from the glass. Pour the whipped egg mixture over the coffee so it floats as a thick layer, dust with ground cinnamon, and serve immediately. Stir before drinking or sip through the foam.
