Ingredients

Instructions

  1. Mix the ground meat, grated onion, garlic, yogurt, tomato paste, salt, pepper, paprika, cumin, oregano and olive oil in a large bowl, kneading by hand until sticky and cohesive.
  2. Divide the mixture into 5 equal portions. Sandwich one portion between two sheets of parchment and roll it with a rolling pin into a very thin, even rectangle, pressing out air pockets.
  3. Peel off the top parchment, then roll the meat up from the long side into a firm, compact log, tightening the parchment as you go and twisting the ends to seal.
  4. Preheat the oven to 200°C (400°F).
  5. Place the wrapped roll on a baking tray and bake for 20-25 minutes.
  6. Rest the meat for 5 minutes, then slice thinly and shred lightly with two forks.
  7. Fill warm pita with the sliced meat and serve with the tomato, lettuce, onion, pickles and sauce.
