- Baking powder1 colher de chá
- Baking soda¼ colher de chá
- Salt¼ colher de chá
- Butter0,58 xícara
- Vegetable oil¼ xícara
- Sugar½ xícara + 2 colheres de sopa + ⅔ xícara
- Egg2
- Buttermilk½ xícara
- Vanilla2 ½ colheres de chá
- Cream cheese1 xícara
- Heavy cream¼ xícara
- Sprinkles
Modo de preparo
- Preheat the oven to 350°F (175°C). Grease 4 ramekins (about 225 ml each) and set them on a baking tray.
- In a medium bowl, whisk the flour, baking powder, baking soda and salt together.
- In a large bowl, beat the butter and sugar for about 2 to 3 minutes until light and fluffy.
- Add the eggs one at a time, mixing well after each, then beat in the oil and vanilla.
- Add the dry ingredients and buttermilk in alternating additions, starting and ending with the flour mixture, mixing just until smooth.
- Divide the batter between the ramekins, filling each about two-thirds to three-quarters full.
- Bake for 25 to 30 minutes, until lightly golden and a toothpick inserted in the centre comes out clean.
- Cool the cakes completely in the ramekins.
- Optional: if the cakes domed, loosen the edges, remove them, trim the tops flat, then return them to the ramekins.
- Make the frosting: beat the butter and powdered sugar until light and creamy, then beat in the cream cheese and vanilla until smooth and fluffy. If needed, add heavy cream 2 tablespoons at a time until the desired consistency.
- Spread or pipe the frosting generously over each cake, smooth the tops, then press sprinkles over the frosting to coat it fully.
- Chill for at least 1 to 2 hours before serving.
