Viral "Maggi" Wings
Ingredients
- Chicken wing2 lb
- Maggi seasoning2 tbsp
- Fish sauce1 tbsp
- Flour¼ cups
- Vegetable oil1 tbsp
- Garlic2 cloves
- Peppercorn¼ tsp
- Cilantro5
- Oyster sauce1 tbsp
- Sugar1 ½ tbsp
- Rice
Instructions
- Put the wings in one layer in a dish or the widest bowl you have. Add the Maggi and fish sauce, toss for about a minute, then marinate at least 20 minutes or overnight.
- Sift half the flour over the wings and toss. Sift the rest over them and toss briefly so each wing has a light, tacky coating.
- Oil the air fryer rack. Place the wings skin side up in the basket without crowding, in 2 batches if needed. Brush or spray with oil and air fry at 400°F for 10-12 minutes until cooked through and well browned. Do not flip. Put the cooked wings in a bowl.
- Make the sauce: in a small bowl, stir the Maggi, oyster sauce and water until the oyster sauce dissolves.
- Finely chop the cilantro stems, keeping the leaves aside. Pound the stems, garlic and white peppercorns into a fine paste in a mortar, or press the garlic, grind the pepper and mince the stems finely.
- Heat a wok on medium, add the oil and the paste, and stir for 1-2 minutes until slightly golden and fragrant.
- Add the liquid mixture and palm sugar. Boil about 1 minute until the sugar dissolves and the sauce reduces slightly, crushing any lumps. Take off the heat.
- Once the wings are cooked, reheat the sauce on medium until boiling. Add the wings with their juices and toss quickly with 2 spatulas until coated and no sauce pools; the sauce should thicken slightly. Remove from heat.
- Chop the cilantro leaves, sprinkle over the wings and serve with jasmine or sticky rice if you like.
