Instructions
- Preheat the oven to 400掳F (200掳C) and line a large baking sheet with parchment paper.
- Put the chicken, yogurt, garlic, cumin, paprika, salt, coriander, turmeric, cinnamon, cayenne and black pepper in a food processor. Pulse 15-20 times until it looks like ground meat and is well combined. Transfer to a large bowl.
- Divide the mixture into 4 portions. Place one portion between two 12 x 16-inch sheets of parchment and roll it into a thin, even rectangle about 1/4 inch thick that reaches the edges. Fold it accordion-style from one short edge in 2-3 flat folds, then repeat with the other portions.
- Put the chicken rolls and the sweet peppers on the lined baking sheet. Bake 20-25 minutes, until the chicken reaches 165掳F (74掳C) in the thickest part; open the parchment to check.
- Rest the chicken for 5 minutes out of the oven.
- While it rests, toast the focaccia halves cut-side up at 400掳F (200掳C) or in a toaster oven for 3-5 minutes, until slightly golden.
- Unroll the chicken and discard the parchment. Tear or slice the chicken into bite-sized pieces.
- Spread 2 tablespoons garlic sauce on each bottom focaccia half. Top each with a quarter of the chicken, 1/4 cup diced tomatoes, 1/4 cup diced cucumbers, 2 tablespoons sliced pickles, 2 tablespoons pickled turnips, 2 tablespoons sliced red onion and 1 mozzarella slice. Melt the cheese with a kitchen torch for 30-60 seconds until bubbly, or broil 1-2 minutes, watching closely. Top with 1/4 cup arugu
- Spread 2 tablespoons garlic sauce on each top focaccia half and close the sandwiches. Press down firmly and cut each diagonally in half.
