- Beef1 lb
- Salt½ tsp
- Black pepper · cracked¼ tsp
- Olive oil1 tsp
- Cucumber½
- Sweet corn1 cup
- Avocado2
- Jalapeño chili1
- Cilantro½ cups
- Scallion¼ cups
- Extra virgin olive oil4 tbsp
- Honey2 tsp
- Lime3 tbsp

Instructions
- Take the steaks out of the fridge 20 to 30 minutes before cooking.
- Heat a cast iron skillet or grill over medium-high heat. Season the steak with salt and pepper, lightly oil the pan or grill, and sear for 4 to 5 minutes until the first side is browned.
- Flip and cook another 4 to 8 minutes until the steak reaches your desired doneness.
- Tent with foil and rest for 10 minutes, then cut into bite-sized pieces and let cool.
- Whisk the dressing ingredients together in a jar or measuring cup, or shake them in a sealed jar.
- Cut the cucumber, avocado and corn kernels, finely chop the jalapeño, and chop the cilantro and green onion. Put everything in a large bowl with the cooled steak.
- Re-whisk the dressing if it has separated, pour it over the salad, then taste and add more salt and lime juice if you like. Serve right away.
