Volcano Fried Rice
Ingredients
- Gochujang · paste2 tbsp
- Soy sauce1 tbsp
- Mirin2 tbsp
- Sugar1 tbsp
- Garlic · chopped2 tsp
- Ginger · chopped½ tsp
- Onion · chopped½ cups
- Black pepper¼ tsp
- Egg4
- Salt1 tsp
- Sesame oil1 tbsp
- Ground pork4 oz
- Rice · cooked2 cups
- Gim · Korean roasted and seasoned seaweed1 packet
Instructions
- Mix all the sauce ingredients in a bowl and set aside.
- Beat the eggs with the water and salt in a measuring cup and set aside.
- Heat a large skillet over high heat. Add the sesame oil and ground pork and cook until browned, about 1 to 2 minutes. Pour in the sauce, lower the heat to medium and simmer for 1 minute, stirring now and then.
- Add the cold cooked rice and mix until every grain is coated with the red sauce. Spread it evenly over the pan, lower the heat to medium-low and leave for 1 to 2 minutes to crisp the bottom.
- Crush the gim by hand, add it to the rice and scrape the rice from the pan to mix it in.
- Shape the rice into a mountain in the middle of the pan with two spatulas (or by hand, wearing gloves). Turn off the heat if this takes a while.
- Press a dent into the top of the rice mountain with the back of a spatula.
- If you turned the heat off, set it back to medium-low. Slowly pour the egg mixture into the dent so it flows like lava.
- Scramble the egg until set, about 2 minutes, then serve once the eggs have settled.
