Warabimochi with Kuromitsu - Yuko's Kitchen - Japanese Cooking 101
Ingredients
- Warabi mochiko starch⅓ cups
- Sugar9 tbsp
- Molasses1 tbsp
- Kinako3 tbsp
Instructions
- Combine the warabi mochi starch, sugar and water in a pot. Cook on high heat, stirring constantly. When it starts to look lumpy, lower the heat to medium and keep stirring until thick and translucent.
- Lightly wet a small baking sheet with water and pour the hot mixture onto it. Spread it a little, let it cool to room temperature, then refrigerate for 1 hour.
- For the kuromitsu, put the molasses, 1/4 cup sugar and 1/4 cup water in a small pot. Boil for 3 minutes, or until very slightly thickened. It will thicken more as it cools.
- Mix the kinako and 3 tablespoons sugar together.
- Just before serving, cut the warabi mochi into squares, coat them in the kinako mixture and top with kuromitsu.
