Instructions
- Whisk the mayonnaise, melted butter, tomato paste, sugar, rice vinegar, garlic powder and paprika in a small bowl until smooth. Chill until needed.
- Melt the butter in a medium saucepan over medium heat. Add the flour and cook, whisking constantly, until light golden, about 1 minute.
- Slowly whisk in the milk and cook, whisking often, until thickened and smooth, 3 to 5 minutes.
- Lower the heat to low. Add the cheddar, mozzarella, Parmesan and mustard, stirring until fully melted and glossy. Season with salt to taste. Cover and keep warm over low heat.
- Heat a thin layer of avocado oil in a cast-iron skillet or griddle over high heat. Season the patties generously with salt and pepper, then smash them directly onto the hot surface.
- Cook until deeply browned and crispy on the first side, 1 to 2 minutes. Flip the patties, top each with a slice of American cheese, and cook until melted, about 1 minute. Remove from heat.
- Spread the ketchup and 1 tablespoon of the yum yum sauce over the cut sides of the bun. Stack the burgers inside and set aside.
- Heat a cast-iron fajita pan over a high gas flame for about 5 minutes, until extremely hot.
- Pour the hot cheese sauce into the hot fajita pan and let it bubble vigorously. Immediately sprinkle the fried garlic and fried onions over it.
- Cut the assembled burger in half and place both halves, cut side down, into the bubbling cheese sauce. Serve immediately from the pan while hot.
