Weeknight Meals - 25-minute Cajun Shrimp, Corn & Tomato
Ingredients
- Olive oil2 tbsp
- Shrimp1 lb
- Lobster½ lb
- Salt
- Black pepper
- Cherry tomato1 ½
- Bell pepper · diced1
- Sweet corn · frozen14 oz
- Garlic · minced4
- Cajun seasoning1 ½ tbsp
- White wine vinegar½ cups
- Vegan butter2 tbsp
- Basil
- Sourdough bread · toasted
- Rice
- Arugula
Instructions
- Heat a pot or deep skillet over medium-high heat. Add the shrimp (and lobster, if using) with a generous pinch of salt and pepper, and cook for 3–5 minutes, until cooked through. Remove them from the pan but keep the heat on.
- Add the whole cherry tomatoes and let them sit until they blister and get sear marks, about 4–6 minutes. Add the green bell pepper and frozen corn and stir; the tomatoes should burst. Then add the garlic and the Cajun seasoning and fold everything together. The corn and tomatoes should release liquid that deglazes the pan.
- Add the white wine and cook until reduced by half, about 6–8 minutes. Return the shrimp (and lobster) to the pan and fold together for 1–3 minutes.
- Lower the heat to low, add the vegan butter and fold gently. Season to taste with salt and pepper.
