Weeknight Meals - Teriyaki Salmon Recipe With Fried Rice

By Fit Men Cook · 30 min

Ingredients

Instructions

  1. Preheat the oven to 420°F.
  2. Marinate the salmon in the teriyaki sauce for at least 20 minutes, or overnight.
  3. Heat a nonstick skillet or wok on high. Spray with oil, then sear the salmon face down for 2 to 3 minutes until the top is seared and caramelized.
  4. Flip the salmon onto a parchment-lined baking sheet and bake for 8 to 12 minutes. Flake the flesh with a fork.
  5. Wipe the skillet clean, reduce to medium heat, spray with a little oil, and scramble the beaten eggs, chopping them as they cook. Set aside.
  6. Add oil, garlic, ginger and green onion to the skillet and cook until fragrant, about 3 minutes, lowering the heat if the onion starts to burn.
  7. Add the cooled cooked brown rice and stir-fry for 1 to 2 minutes, then add the eggs and chop them finely while mixing.
  8. Gently fold in the flaked salmon, then add the frozen peas and carrots and the soy sauce.
  9. Remove from the heat and keep stirring until the vegetables thaw.
  10. Drizzle with sesame oil and garnish.
