Ingredients

Instructions

  1. Cut off the ends of the calabash and peel it with a knife or peeler.
  2. Slice it open, remove the seeds, then slice again and cut into cubes. Set aside in a bowl.
  3. Over medium-high heat, add the vegetable oil and cleaned shrimp to a pot. Fry for 1–2 minutes, then remove the shrimp from the pot.
  4. In the same oil, add the chopped onion, green chillies, garlic, thyme, curry leaves, mustard seeds, cumin seeds and salt. Stir and sauté until the onions are translucent.
  5. Add the calabash, turmeric powder, chopped tomato and some chopped coriander. Stir and simmer for 5 minutes. Add more oil if the calabash soaks it up.
  6. Add boiling water, cover and cook until the calabash is soft, adding more water as needed.
  7. Once the calabash is soft, return the fried shrimp to the pot. Stir and simmer for another 5 minutes so the flavours blend.
  8. Take off the heat, garnish with chopped coriander and serve.
