Spinach Mushroom Beans
Ingredients
- Oil3 tsp
- Mushroom · thinly sliced6–8 oz
- Salt0.63 tsp
- Oregano · dried¼ tsp
- Chili flake · flakes¼ tsp
- Onion · chopped1 cup
- Garlic2 cloves
- Cajun seasoning1–2 tsp
- Flour1 tbsp
- Spinach · frozen6 oz
- Vegan cream cheese2–3 tbsp
- Parmesan cheese¼ cups
- White bean15
- Lemon
Instructions
- Heat a large skillet over medium-high heat. Add 1 teaspoon oil and the sliced mushrooms; cook 3 to 4 minutes, stirring occasionally, then add 1/8 teaspoon salt, 1/4 teaspoon oregano and 1/4 teaspoon red pepper flakes.
- Keep cooking until the mushroom edges brown. If the slices are thick, cover for 2 to 3 minutes, then uncover and brown. Set the browned mushrooms aside.
- Add the remaining 1 teaspoon oil to the same skillet. When hot, add the onion, garlic and 1/4 teaspoon salt; cook until golden, about 3 to 5 minutes.
- Add the Cajun seasoning, flour and remaining 1/4 teaspoon salt; mix and cook 1 minute.
- Gradually stir in half the water until the flour is mixed in. Add the rest of the water and the vegan cream cheese and mix until smooth.
- Add the spinach, vegan Parmesan and white beans, stir, spread evenly, and reduce heat to medium. Cover and simmer 6 to 8 minutes, until cooked to your liking.
- Taste and adjust salt, seasoning and consistency: add more liquid if too thick, cook longer if too thin. Fold in half of the mushrooms.
- Garnish with red pepper flakes, the reserved mushrooms and extra vegan Parmesan if you like.
