What Is The Best Way To Make Mash?
Ingredients
- Potato6
- Sea salt for baking and seasoning
- Bay leaf3
- Garlic4 cloves
- Butter100 g
- Peppercorn6
- Milk500 ml
Instructions
- Preheat the oven to 180°C.
- Rinse the potatoes under cold running water and dry them well. Prick each one about 10 times with a small sharp knife.
- Spread an even layer of salt on a flat oven tray and place the potatoes on it.
- Bake for 1 hour 20 minutes, until completely soft throughout, then rest for 15 minutes.
- Meanwhile, heat the bay leaves, garlic, 100g butter, peppercorns and milk in a medium saucepan over medium heat to infuse, taking care not to let it boil over.
- Halve the potatoes and scoop out the flesh. Pass it through a ricer, or mash it with a potato masher.
- Put the mash in a clean large saucepan and stir over medium heat for 2 minutes to dry it out.
- Strain the infused milk and add it to the potato in 3-4 stages, mixing fully each time. Taste and season as needed.
- Spoon into a serving bowl and top with a few knobs of cold butter (25g).
