What Makes A PERFECT Frittata? | Chef Jean-Pierre
Ingredients
- Extra virgin olive oil½ lb
- Onion½
- Mushroom · diced2 cups
- Potato2 cups
- Broccoli1–2 cups
- Spinach2 cups
- Egg14
- Cheddar cheese · grated1 cup
- Parmesan cheese · grated1 cup
- Hot sauce1 dash
- Parsley · chopped1 tbsp
- Salt
- Black pepper
Instructions
- Preheat the oven to 375°F.
- In an 11-inch non-stick oven-proof frying pan over medium heat, render the bacon fat (or heat 2 tablespoons olive oil if not using bacon). Cook the onion until light golden brown, then add the mushrooms and cook until they release their water.
- Add the potatoes, cover and cook over medium heat until they start to become tender. Uncover and cook until fully tender. Add the spinach, cover for a minute or two until wilted, then transfer to a lasagna pan or baking sheet to cool for a few minutes.
- In a glass bowl, beat the eggs until fluffy. Add the salt, pepper, hot sauce, cheeses and the parsley and blend well.
- Brush a cold 11-inch non-stick frying pan with 1 tablespoon olive oil, coating the bottom and sides.
- Add the cooled potatoes and vegetables to the eggs, pour into the prepared cold pan, and do not stir the vegetables afterward. Bake right away for 25 to 35 minutes, until the center is cooked and set.
- Sprinkle with fresh parsley and Parmesan and serve warm.
