- Zucchini2
- Mushroom8 oz
- Carrot · julienned1
- Scallion
- Soy sauce3 tbsp
- Bbq sauce3 tbsp
- Maple syrup2 tbsp
- Garlic2
- Ginger1 tsp

Instructions
- In a small bowl, combine all the sauce ingredients and set aside.
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the beef and sauté, breaking it up with a spatula, for about 5 minutes until fully cooked and lightly browned. Move the beef to a bowl, keeping any oil in the pan.
- In the same pan, add a little oil if needed, then add all the vegetables. Sauté, stirring often, for 2 to 3 minutes until the zucchini is half cooked and still crunchy. Do not overcook.
- Return the beef to the pan, add the sauce and stir. Cook, stirring occasionally, for about 2 minutes until fragrant. The zucchini should be crisp-tender.
- Season with salt and pepper to taste, remove from the heat and serve over freshly cooked rice or in lettuce cups, garnished with chives if desired.
