When Sicily gives you lemons, make pasta
Ingredients
- Pasta180 g
- Lemon1
- Parmesan cheese · finely grated, flakes50 g
- Garlic · diced4
- Olive oil2 tbsp
- Parsley · chopped
Instructions
- Boil plenty of well-salted water in a large pot. Add the pasta and cook for about 2 minutes less than the package time.
- While the pasta cooks, gently sauté the garlic in olive oil in a large skillet over low heat so it flavours the oil without burning.
- Finely grate the zest of the lemon, then squeeze its juice and remove any seeds. Add the zest and juice to the skillet with a ladle of pasta water.
- When the pasta is ready, transfer it to the skillet with 1/2 cup of pasta water and finish cooking over medium heat.
- Add the grated parmesan and stir constantly. If the pasta looks dry, add another ladle of pasta water and keep stirring for a couple of minutes until creamy and silky.
- Stir in the chopped parsley and serve. Optionally, drizzle with a little olive oil and add more parmesan.
