Whole Roasted Cauliflower with a Flavorful Marinade

Ingredients

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix 2 tablespoons soy sauce with the rest of the marinade ingredients. Add 2 to 3 tablespoons water or vegan chicken broth and mix well so the garlic and salt are fully combined.
  3. Make small cuts on the top and bottom of the cauliflower with a thin knife. Pour half the marinade into the upturned cauliflower and swirl it to coat the inside. Brush the outside lightly and let it sit upside down to marinate for at least 1 hour (optional).
  4. After marinating, brush more marinade over the cauliflower and place it in a greased baking dish or cast-iron skillet.
  5. Toss the potatoes, carrots, 1/3 teaspoon salt, 1/3 teaspoon black pepper and 1 teaspoon oil in a bowl, and arrange them on either side of the cauliflower. They can be baked separately and added to the cauliflower before serving.
  6. Cover with foil or another dish, loosely, so it covers most of the cauliflower dish. Roast at 425°F (220°C) for 30 to 35 minutes, longer for a larger head.
  7. Add 1 to 2 tablespoons water and 1/2 tablespoon soy sauce to the remaining marinade. Uncover and baste the cauliflower generously.
  8. If there is not enough liquid in the pan, drizzle a few tablespoons of water or broth around the cauliflower so the vegetables do not scorch. Bake uncovered for another 20 to 30 minutes.
  9. Check with a knife that the cauliflower is cooked through. Baste with any leftover marinade and garnish with fresh herbs.
