Whole Wheat Naan Bread. Amazing 100% Whole Grain Naan
Ingredients
- Spelt flour¼ cups
- Yeast1 ½ tsp
- Maple syrup½ tsp
- Yoghurt¼ cups
- Whole wheat flour1–1 ½ cups
- Salt½ tsp
- Baking powder½ tsp
- Oil2 tbsp
- Garam masala
- Garlic · minced
Instructions
- Mix all the sponge ingredients in order, stir well, cover with a towel and let rest 25–30 minutes in a warm place.
- Add 3/4 cup flour, the baking powder, salt and oil to the sponge and mix well. Add more flour as needed to get a slightly sticky but cohesive dough.
- Knead 2–3 minutes until fairly smooth.
- Cover the bowl with a thick towel and let the dough rise until almost doubled, 1 to 1.5 hours depending on room temperature.
- Drizzle a few drops of oil on the dough, spread it, and use a tablespoon of flour if needed to form a smooth ball. Divide into 3 or 4 equal portions and shape each into a smooth ball.
- Place the balls on parchment, cover with a towel and rest 10–15 minutes.
- Shape each ball into a naan with a rolling pin or by gently pressing with your hand, keeping the air in the dough. Spritz with water and press on any toppings.
- Heat a cast iron or heavy-bottomed skillet over medium-high heat. Cook each naan 1 to 3 minutes per side, optionally covering for half a minute. Brush generously with vegan butter or oil. Keep covered with a towel if not serving right away.
