- Butter14 tbsp
- Fl oz ice water4–5
- Lemon1 tbsp
- Flour2 ⅓ cups
- Salt0.17 tsp
Instructions
- Freeze the butter for at least 2 hours, or preferably overnight.
- Mix the water and lemon juice in a jug and set aside.
- Mix the flour and salt in a large bowl.
- Grate the frozen butter on the large holes of a grater straight into the flour, then stir to coat it.
- Add the water and lemon juice mixture a little at a time, keeping some back, and gently bring the pastry into a ball using only enough liquid to bring it together.
- Wrap the dough in cling film and chill for at least 1 hour. It can be kept up to 3 days or frozen; it will get a little wetter as it rests.
- When using the pastry, follow your recipe's instructions and always bake in a hot oven.
