Preparación

  1. Cook the bacon low and slow in a skillet or in a 400°F/204°C oven until the fat has rendered and the bacon is very crisp.
  2. Slice the heirloom tomato into slices at least 1/2 inch (1–2 cm) thick, sized to fit the bread edge to edge. Sprinkle with salt and a couple of cracks of black pepper, and let sit for 10 minutes.
  3. Spread mayo on one side of each bread slice and toast in a pan until golden brown. Lightly toast the other side so it stays a little soft.
  4. Finely shred the lettuce. Mix a little mayo with the vinegar (or another acid such as citrus or pickling liquid), drizzle over the lettuce and toss to coat evenly.
  5. To assemble, spread mayo on the top bread slice and dressed lettuce on the bottom slice. Layer the thick tomato slices over the lettuce in a single layer, add 2 pieces of crispy bacon, and close with the top slice.
  6. Repeat for the second sandwich.
